    Being someone struggling with medical issues this past year with a doctor that said my diet of red meat and pork was killing me – I would love to see more of this in this thread! Gonna have to fire my smoker up soon to make some smoked salmon for myself.

    You ever try 5:1 brown sugar to salt, with no garlic, baste with maple syrup every hour, and bring internal up to 155? Talk about yum. Candy.

    Fuck. I usually only eat grilled, blackened, or fried right out of the gulf. But this has my freshwater tendencies tingling. Would you recommend the same method for like a flounder?
